Chef Edoardo’s journey began in South America.
Edoardo’s mother and grandmother shared a kitchen in Quito, Ecuador, nestled in a valley in the Andes. From a very young age, Edoardo watched them cook. As he grew older he began cooking meals for his family.
At the age of 17, he traveled to Italy. Where else? He lived there for eight years and learned from some of the world’s greatest chefs to hone an indisputable talent.

Edoardo’s mother and grandmother shared a kitchen in Quito, Ecuador, nestled in a valley in the Andes. From a very young age, Edoardo watched them cook. As he grew older he began cooking meals for his family.
At the age of 17, he traveled to Italy. Where else? He lived there for eight years and learned from some of the world’s greatest chefs to hone an indisputable talent.

In 1991 Edoardo left Italy for America. He brought his Italian culinary skills to landmark restaurants in New York City, San Domenico, Da Silvano and San Pietro. Edoardo had become a great chef. But he had another dream: to own his own restaurant.
In 2007 he opened Cafe Di Capria, a warm, casual cafe that later became Sol Di Capri. Sol Di Capri, located in Tribeca, was a truly authentic and quaint dine-in experience for almost 15 years. As happened to many other restaurants, the pandemic forced Sol Di Capri to close its doors in 2021.
Edoardo was not to be thwarted. He re-imagined and re-created his iconic restaurant and moved it closer to his home and family – and to you! His new restaurant in Huntington, Long Island, opened its doors in 2022, keeping the spirit of Sol Di Capri, now under a new name: Edoardo’s.
Many chefs boast a biography that proclaims their love of cooking. Eduardo is the embodiment of love. He not only cooks with love -- he exudes love! You won’t find him without a giant smile, making you a cup of coffee, whipping up a bowl of pasta, or preparing a tantalizing sauce. When Edoardo asks about your day, he actually listens! He’s not only a people person.… he’s a people lover.
